Good Mood Blender

Everyone has milestones in their lives that make them feel more and more like certified grown-up. For some it's graduating from college, or having a child, or buying a house. Some people never get the grown-up feeling at all. I felt like I became more of an adult when I recently got a food processor. This thing blends, whips, chops, and kneads dough. It's all very mature.

I had no idea how satisfying it was to watch things being pureed. I recommend food processing to anyone who needs both a mood boost and a snack. :)

I've been making things from scratch - anything that needs mixing or chopping - for weeks now. As you know, I love soup! Gazpacho isn't the only chilled summer soup option out there. For instance, here's my favorite recipe right now: 

 

 

Chilled Snap Pea Soup:

  1. Bring vegetable broth and half and half to a boil in a large pan and then add the snap peas; boil for 2 minutes.
  2. Allow the mixture to cool slightly then puree in a food processor or blender until smooth (YEAH!)  (Optional: pass the mix through a mesh strainer at this point)
  3. Stir in lemon juice and minced oregano
  4. Add salt and pepper to taste
  5. Put in the refrigerator to chill for at least an hour before serving.

I like to serve this soup topped with a few of those dry wasabi peas, and garnished with a slice of lemon. A dollop of sour cream or crusty toasted bread are nice accompaniments too. Yum!

I'm 35 years old and I still don't feel like an adult. I feel old, I just got promoted to manager (no pay increase) and I got excited when my 401K went back up to pre-2009 levels. But I just can't consider myself an adult. Maybe it's because I just bought a PS3 with my casino winnings :)
