Good Mood Granola Recipe

There’s something about granola that makes me feel warm inside. It’s a great snack and it has an amazing array of flavors. Here’s a recipe I found that describes how to make the Best Granola Ever. With a nickname like that, how could it not put a smile on your face?

Ingredients:

Move oven racks to middle positions.

Preheat oven to 275 degrees.

Coat two metal cookie sheets with cooking spray or oil, then set them aside.

In a saucepan over low heat, bring oil, syrup, molasses, cinnamon, water to a simmer.

Mix oats and almonds in a large bowl.

Pour oil and maple syrup mixture over oat mixture and stir together.

Pour mixture onto both prepared cookie sheets.

A handful at a time, clump granola into small balls. Bake 30 minutes.

Stir, and continue to bake until golden brown, or about more 15 minutes.

Remove from oven and let cool.

You can store this Good Mood Granola (aka Best Granola Ever!) for about 2 weeks. Recipe yields about 2 quarts.
