Homemade Pasta!
Soup filled with thick, homemade pasta noodles is such a wonderfully satisfying food that it makes me happy to look at before I even taste it. Usually, it's the difficult-to-make things that are the most rewarding to eat, but homemade pasta is an exception to that rule: it's incredibly easy to make yet leaves you feeling like a professional chef because pasta is so rarely made at home.

There's a good chance you already have everything you need to make pasta in your kitchen right now! The only ingredients needed for basic fresh pasta are flour, eggs, olive oil and a bit of salt. Here's how to make it:
- In a bowl, first mix 2 cups flour and 1/4 teaspoon salt, then form a well in the center of the flour mixture and add 3 eggs and 2 1/2 tablespoons olive oil in the well. Stir the eggs and oil together first, then gently mix in the flour too until a dough forms.
- Divide the dough into three balls and cover with a damp cloth until you knead it.
- Knead each ball of dough for about five minutes on a lightly floured surface, then roll it out with a rolling pin until it's the thickness you'd like your pasta to be.
- Cut the pasta into thin strips for noodles. (Go ahead and make more complicated pasta shapes if you can! I happen to think a crooked little noodle is somehow the most delicious, and that's a good thing because it's the only shape I can make.)
- Hang the noodles up to dry for about an hour. For me, this is one of the most fun parts. I construct a temporary little noodle clothesline in my kitchen.
- Now cook the noodles like regular pasta by boiling them. But these fresh noodles will only have to boil 2-3 minutes before they're ready to eat!
If you get really serious about making your own pasta and want to make the process even faster, there are pasta machines that will roll out your dough and cut it into all kinds of pasta shapes for you.

I agree,making your own food from scratch smoehow makes it taste better. I guess the sense of accomplishment is the added x factor.

the only thing missing is fresh homemade bread, wine, sauce, oil, vinaigrette, candles and cheese..

Yea! A new video. Love your video posts. Thanks for the pasta post. My favorite pasta recipe? Pepper pasta. Fresh (or dried) pasta, butter (and olive oil), Parmesan cheese (lots of cheese, please) and pepper. Your choice of pepper. Most people use fresh ground but I prefer a light dusting of Cayenne. Fast, delicious, cheap. What could be better?
