Summer Solstice Sun Teas

Today, June 21st, is summer solstice, the longest day of the year. It's going to be hot and dry here in LA today... an ice tea would be nice, but no one likes boiling a gallon of hot water in the summer heat. If you're a tea drinker, celebrate solstice by letting the sun do the work - here's a couple little twists on the traditional sun tea recipe.

All you need is a large glass jug (about a gallon, preferably) tea bags and a sunny day, and the sun will do the brewing for you. Most people have tried regular sun tea, but what about fruit sun tea or mint sun tea?

Peach Sun Tea

For Mint Sun Tea, (this is my favorite) follow the same instructions as above, except thoroughly wash 10-15 fresh mint leaves and add them to the tea in place of the peaches. Squeeze a bit of lime into this tea before serving.

Promptly refrigerate sun tea after it's brewed, and serve over ice with with fresh fruit or mint garnish.
